Okonomiyaki in Osaka
235 places on the city's licence register have お好み焼き in the name their owner registered. That is a floor and not a total: a shop that serves it under another name is not counted, and nothing here is a ranking.
What it is
Batter loosened with dashi, chopped cabbage, meat or squid folded in, and the whole thing flattened on an iron plate and browned on both sides. Its root is said to be funoyaki, a tea sweet served at the tea gatherings Sen no Rikyu held in the Azuchi-Momoyama period: flour and water spread thin on a copper plate, brushed with miso and rolled. By the end of the Edo period cooking batter on a plate had spread to ordinary households. In the late Meiji era came yoshoku-yaki, made with imported flour, cabbage and sauce, a cheap snack that shops gradually built up with pork and piles of vegetables until it became okonomiyaki. The first style laid the filling on top of the cooked batter; mixing it in came later. It became known nationally as an Osaka speciality from the mid-1960s into the 1970s, when chains sold it as exactly that.
