Takoyaki in Osaka
185 places on the city's licence register have たこ焼き in the name their owner registered. That is a floor and not a total: a shop that serves it under another name is not counted, and nothing here is a ranking.
What it is
Ask for the taste of Osaka and takoyaki is the first answer. Batter loosened with dashi and egg goes into the round wells of an iron plate, a piece of boiled octopus into each, and it is turned until it is a ball. It is said to descend from chobo-yaki, a snack sold at sweet shops and festival stalls from the end of the Meiji era into the Taisho era, and then from radio-yaki, a stall food named after the radio when broadcasting started in Japan in the mid-1920s. In the early Showa era a stall in Osaka put octopus into radio-yaki, and takoyaki began. At first it was eaten plain; the way it comes now, brushed with thick sauce, dusted with aonori and dried bonito and served in a paper boat with a toothpick, settled after the war once thick sauce existed.
